Cosmopolitan Cranberry Sauce Recipe

Before I left the house for Shelby and Jackson's wedding I had the bright idea that I would see if I could Kroger Clicklist all the ingredients for a turkey dinner. Taylor had the bubonic plague and I knew that after shooting for 10+ hours, I would be too exhausted to go out. My husband and I would FEAST on New Year's Eve from the comfort of our home.  Here is the extremely easy Cosmopolitan Cranberry Sauce from Epicurious I made to go with everything. Just so you know I have never made this recipe the way that it was intended to be made. When I first tried it 10 years ago I was so broke that I opted for the orange juice version of the recipe rather than the vodka version. I liked it so much that I have never tried it the other way. I love using it on a turkey sandwich with rye bread and goat cheese! Here's the recipe! Enjoy!

This is not my favorite image ever...it's getting dark too early now and I needed a flash but I was afraid our dog Dodger would eat this dish while I went to get it........ SOOO with my cooking ADD who knows when I will make this dish again and it is too good of a recipe for me to not share because of a shadowy overhead light photo. I'm thinking of you. I honestly am. I love zucchini noodles, but my husband Taylor, not so much. He doesn't like how watery they are. This recipe has you "steam" the noodles in the crockpot while you're cooking everything else. It was brilliant! I put them in at the halfway mark to make sure they were still a little crunchy. This past week this recipe popped up in my Facebook feed and I decided to try it. It is so easy to make and is soooo good. When the hardest part of a recipe is making the quinoa, it's my kind of recipe. I used my Instant Pot to make the quinoa but you could always buy the precooked frozen kind to make it even less painless. The recipe is vegan, but I added feta to it which, in my opinion, makes everything better. This recipe comes from one of my favorite food recipe bloggers - Skinny Taste. I was planning on making this recipe a couple weeks when it was freezing cold, but life and work got in the way and I made it today and it's close to 90 out. This is nowhere near as pretty as anything that I photographed this past weekend at Food and Wine, but it still tasted pretty dang good. It's really garlicky which I love.. just make sure that you eat it on a day when you're not planning to be around people for several hours. Also don't burn your parchment paper like I did while crisping up your tortilla. Thanks to Running on Real food for creating this recipe. I am not a good cook. I can semi follow a recipe alright. Although the bok choy in this shot is not cooked all the way, the tofu isn't caramelized enough, and I stuck the plate in the microwave after taking this photo, it was SOOO delicious. The recipe was from Minimalist Baker and you should definitely make it. Click HERE to get the recipe. I used frozen cauliflower rice to save time (although I didn't thaw it long enough hence the microwave) and used expired maple syrup instead of honey because my honey had solidified. I'm still alive and it was still good!

Tofu Cauliflower Vegetable Korma Recipe

A Tofu Cauliflower Vegetable Korma Recipe from Yummy Beet. 

I LOOOVE Indian food. It is quite possibly my favorite type of food. Yesterday after successfully avoiding the gym I decided that I wanted to make a veggie korma and while sitting outside my closest Kroger in Nashville googling for a recipe (because that's the smart way to do it), I found this one from Yummy Beet. It is really easy and seriously good. I opted to serve it over cauliflower rice to make myself eat even more veggies. I took a quick photograph of the dish but I didn't take too long to arrange it because it smelled way too good and I couldn't wait any longer to eat it.
